Sticky Pear and Blackberry Breakfast Cobbler




Blackberries are in season from August to October, often found growing wild.  Blackberries are abundant in antioxidants, or specifically anthocyanins which are responsible for the beautiful purple colour.  

Blackberries are also a very rich source of vitamin C, K, and fibre – they really are a super berry. There are so many delicious ways to enjoy blackberries, including this breakfast cobbler which is great as a shared breakfast to enjoy with friends and family. 


Serves 3-4



Ingredients:

  • To make the breakfast cobbler filling.

  • 2 medium pears, skins on

  • 3 tbsp brown sugar

  • 1/2 tsp pure vanilla extract

  • 1 tsp cinnamon

  • ¾ cup fresh blackberries



  • To make the breakfast cobbler topping.

  • 2/3 cup oat flour (gf if needed)

  • 2 tbsp almond flour

  • 1 tbsp brown sugar

  • 3/4 tsp baking powder (gf if needed)

  • 2/3 cup of milk or plant milk of choice

  • 2 tbsp extra virgin olive oil



Instructions:

  1. Preheat the oven to 200 dc.

  2. Heat a little olive oil in a cast iron pan. Slice the pears into 1-inch-thick slices and add to the heated pan, along with the brown sugar, vanilla extract, and cinnamon. Coat the pears fully and allow to simmer in the pan for 5 minutes. Transfer to the oven for 10-15 minutes to roast the pears.

  3. In the meantime, combine the oat flour, almond flour, sugar, and baking powder. Whisk in the milk and extra virgin olive oil. Remove the pear mixture from the oven, sprinkle over the blackberries and scoop over the batter mixture. Sprinkle over a little brown sugar to the top of the batter before baking for 25-30 minutes or until golden brown.

  4. Allow to cool and serve with Coconut or Greek yogurt.
