
Makes 8 pancakes
Lupin flour is made from ground lupin beans, a legume related to peanuts. High in protein and fibre but low in carbs, lupin flour makes an excellent ‘protein’ pancake.
Ingredients:
Wet ingredients
3 tbsp maple syrup
2 medium eggs
230ml plant milk
1 tsp vanilla extract
Dry ingredients
100g lupin flour
50g gf self raising flour
1 tsp gf baking powder
2 tbsp cacao powder
1 tbsp flaxmeal
1 tbsp psyllium husk
1 tsp cinnamon
Optional: ½ cup blueberries – using 6-7 to top each pancake
Instructions:
Combine the wet ingredients in a large bowl.
Combine the dry ingredients in another bowl, and whisk into the wet ingredients to fully combine.
Heat a skillet/pancake pan over a medium heat using 1 tbsp EVOO to coat the pan.
Once the pan is hot, ladle around 1/3 cup of the mixture onto the pan and throw on the blueberries. Once the pancake starts to bubble, flip!
You may need to lower the temperature of the pan, the lupin flour will burn more easily than a normal pancake.
